8. Paleo Cauliflower Rice
When it comes to health, rice is a great option for vegans. This recipe is a perfect paleo dish for those who are rice lovers.
Ingredients: 2 cups cauliflower florets, 2 tbsp of coconut or olive oil, 1 sliced red onion, 4 minced cloves garlic, coarse salt, 1/4 cup low-sodium vegetable stock, 1 tbsp of minced fresh ginger, 1 thinly sliced red chilli, 2 cups of broccoli florets, 1 large carrot cut into thin short strips, 1/2 red bell pepper seeded, stemmed and diced, 1/2 lemon juice, 2 tbsp shelled pumpkin seeds and 2 tbsp of fresh cilantro leaves
Method: Grind the cauliflower florets in a food processor until they get finely chopped. Heat one tablespoon coconut oil in a large pan over medium flame. Add 1/2 sliced red onion and two minced garlic cloves to cook stirring until they get tender for about 6 minutes. Add chopped cauliflower to season with coarse salt. Stir in vegetable stock and steam it, covering until stock has evaporated and cauliflower gets tender for about 5 minutes. Transfer the mixture into a bowl and cover. Wipe the pan and heat one tbsp olive oil over medium-high flame. Add 1/2 sliced red onion to cook for 5 five minutes. Add two minced garlic cloves, ginger and chili to cook for 1 minute. Add the broccoli florets, carrot and bell pepper to cook for 5 minutes and season it sprinkling some salt. Turn off the flame and add lemon juice. While serving sprinkle one tbsp of pumpkin seeds and cilantro.
