7. Daikon Rolls with Cilantro Pumpkin Seeds Pesto
These tiny little rolls are a great option for snacking when it comes to enjoying best ever paleo vegetarian recipes with goodness of healthy nutrients.
Ingredients: ½ cup of raw pumpkin seeds, 1 small bunch of cilantro, 2 small green onions, 2 daikon radishes peeled and sliced length wise into thin strips, ½ English cucumber peeled and sliced into batons, ½ avocado sliced, a handful of sprouts broccoli or radish, 2 tbsp of olive oil, 1 tbsp lime juice, salt and black pepper to taste.
Method: Grind the pumpkin seeds, green onions, cilantro, and ½ teaspoon salt in a food processor until they get roughly chopped. Meanwhile, gradually add olive oil and lime juice and scrap down the sides as necessary to blend until a coarse purée is prepared. Add 1-2 tsp of water if necessary to make a spreadable paste. Then start seasoning pesto adding additional salt and freshly ground pepper. Spread a small amount of the prepared pesto mixture inside the daikon slice. Top the mixture with large edge with the cucumber batons, sprouts and avocado slices. Then roll the daikons tightly away from you placing crease side down on a plate and serve immediately sprinkling with extra pinch of salt squeezing some lime if desired.
