5. Vegetarian Stuffed Cabbage
A great Paleo vegetarian recipe loaded with the goodness of vegetables and healthy nutritious chestnuts.
Ingredients: 1 cabbage, 3 carrots, 3 parsnips, 12 chestnuts, 1 onion, 10cl white wine, 1 tsp olive oil, salt, white pepper and hot chilli pepper powder to taste.
Method: Peel parsnips and carrots to cut into small pieces and steam for 20 minutes. You have to steam cabbage for 20 minutes too. Then peel and finely chop the onion and saute the onion in a pan with olive oil. Add the chestnuts to cook for few more minutes and add carrot and parsnip pieces on low flame to get them cooked for 2-3 minutes. Then deglaze with white wine and season with salt, white pepper and a pinch of chili pepper powder. Peel the outer leaves of the cabbage off. In a bowl, mix chestnuts, carrot, parsnip preparation and the rest of the chopped cabbage to make small balls with the mixture and place them on a middle of a cabbage leaf folding the sides over and serve hot with salad mix.
