4. Cranberry Walnut Paleo Granola
A super healthy and nutritious vegetarian dish that can be enjoyed by anyone.
Ingredients: 1 cup slivered almonds, 1 cup dry cranberries, 2 cups chopped walnuts, 1 cup raw pumpkin seeds, 1 cup shredded and unsweetened coconut, 2 tbsp of coconut oil, 3 tbsp of honey and salt to taste.
Method: You need to preheat the oven at 300 degrees. Mix nuts, seeds, coconut and salt in a large bowl together adding coconut oil and honey to mix until well blended. Then bake on a rimmed cookie sheet which is lined with parchment paper for up to 18 – 20 minutes until it gets lightly browned. Then add the dried cranberries to toss and combine. Cool the dish completely before serving.
