3. Mini Cauliflower Crust Pizza Bites
This recipe is for our vegan kids who love to have some change when it comes to satisfy their tiny little hunger pangs. This Paleo vegetarian recipe is super simple and quick to prepare.
Ingredients: Mushroom, spinach, pizza sauce, cheese for topping and for crust 1 ½ cups of drained cauliflower, ½ cup of almond meal, 1 ½ tbsp of ground flax seeds, 2/3 cup of water, ½ tsp of oregano and garlic powder and ½ tsp of black pepper and sea salt to taste.
Method: First preheat the oven to 420º placing a pizza stone inside. In a small bowl, mix flax and water using a fork which is the flax egg mixture. Add cauliflower pieces to a food processor to pulse until well grounded. Then squeeze out the excess water from the processed cauliflower. Mix all the ingredients in a large bowl adding the cauliflower. Add in flax egg mixture and stir it. Then remove pizza stone from the oven covering with parchment paper. Prepare 2 ingredient pizza crusts and place it onto the stone. You have to pre-bake the crusts for minimum 15 minutes. Remove it to add sauce and toppings. Bake it again for 8-10 more minutes until cheese is melted or toppings are properly cooked. Enjoy it hot!
